Cascalote Latin Bistro was created by Chef Julian Hoyos and his family. It is located in the culturally diverse neighborhood of Spanish Harlem. The name “Cascalote” comes from the name of a beautiful small farm village located in Puebla, Mexico. The people in this village are skilled farmers, with years of rich culture and tradition. Chef Julian discovered his passion and love for cooking when he was just 7 years old. He suffered a childhood of poverty with very little resources. As a young boy he would try to help his mother by making tortillas and “atole”, a hot corn beverage, very popular in Mexico. Cascalote is also where Chef Julian’s wife was born and raised. The two met back in 1989 as teenagers and have been inseparable ever since. Together they create magic in the kitchen. It is a spectacular fusion of love, passion, skilled technique, and flavorful ingredients. In 2013, Chef Julian decided it was time to open his own restaurant. He wanted to include his entire family in this project and dream. His wife is the sous chef to his kitchen, while his three daughters run the restaurant floor. Chef Julian decided to search for a better life, so he moved to New York City when he was 14 years old. He began his extensive career as a cook at the age of 17 in Firenze Restaurant in NYC. Chef Julian developed more experience and culinary techniques as he worked tirelessly in different restaurants throughout the years.
